I am being sued for vehicle damage. I have not had time to file papers to counter-sue due to school but I was wondering if I am able to sue them at a later date (before statute of limitations) for my vehicle damage?

if you have insurance, it is the insurance company's job to defend you.

Yes, you can countersue at any time you want. They are two separate cases.
