I was made aware that I need three years experience to get a work permit, however, is it possible to work without the 3 years experience? If the answer is no, could it be possible for me to practice 3 years in the British Virgin Islands and then move to the Cayman Islands, or do the 3 years of experience have to be in the UK?

You could consider offering your services as a paralegal, but once you do that you are somewhat stuck. The experience has to be gained in a Commonwealth Jurisdiction and I am not sure that the BVI, as a BOT, would count.
