if you work in a law firm in a business, with several other employees (trainee solicitors, fee earners etc) who's allowed to open the post. Can employees open the post addressed to the company itself as they are the ones doing the work and all post is for them anyway, or must the post be opened by a Partner of the business

Anyone can open the general mail, but mail received personally address to one of the employees has to be opened by them. Some partners in firms like to open all the mail just to see what's coming in the door, before distributing to specific departments. Entirely up to the individual company.
