Ok- so I got in a car accident the other day and the guy that I hit is now claiming that he got injured, even though at the time of the crash- the officer who was in charge wrote down that nobody was injured at the scene of the crash. So now this guy is faking an injury to get a bigger claim. So how does a person fight this?

You hire a private investigator. This private investigator will discretely monitor this person.
If this person is really not injured it won't take long for the private investigator to get proof, photos, video, etc. They will catch him taking out the trash, mowing the lawn, carrying groceries, lifting at his job, etc.
This evidence could be used to charge this individual with insurance fraud. Give this evidence to your insurance company and let them and the police take it from there.

Often times, especially with soft tissue injuries, you don't realize the extent of your injuries until the next day when the pain and bruising start, so unless you are a medical doctor and have examined the person whose property you damaged, how can you say it is fake?
But to answer, you don't fight it. Your insurance company will look at the accident and any doctor reports the injured person turns in, and pay out accordingly. If you have any concerns, they are best addressed to your insurance agent.
