Is there such a type? What about real estate and patent attorneys; would these fall into this category?

IP attorneys have a very specialized business that runs hot-and-cold. You might not have much going for months, then there's a big infringement suit. Stress either way, no biz or hot biz.
Real estate closings can be a nightmare with last-minute glitches.
There is NO such thing as a lawyer with low-moderate stress. There is no such thing as a lawyer with any sort of salary with "decent" hours since only corporate attorneys and new attorneys get salaries, and they work like dogs 12-14 hours a day (I have known a number of them who won't work more than 6 hrs on Sundays).
With the glut of attorneys, and low incomes for so many of them, most are hustling like crazy to keep their practices open and pay off their student loans.

It really depends. The profession as a whole is the opposite of what you have described.
